Gentle handling of the fruit to ensure freshness, texture, and depth. Fermented in open vessels with gentle pumping over to ensure even maceration, pressed gently, and run to aged French oak barrels for 10 months. A fragrant medium-bodied wine, undeniably aromatic, with distinctive notes of mulberry and plum, and occasional hints of dried herbs. A juicy, fleshy palate making it oh-so drinkable! Best drank young 3-4 years from release. The aim is to showcase the variety’s natural fragrance, generous flavours, and long savoury tannins. Vintage 2021 is a deeply coloured standout vintage and great drinking all year round.
