We have just one block of Cabernet, which we know as ‘Schoff’s Hill’. Named after Christian Schoff, who bought the land from the Crown. Located adjacent to our homestead and a small distance from our main vineyard.
A full bodied elegant style, aged in fine French oak. Powerful yet fragrant, seriously tannic yet with allure and richness. One complex wine. Typical dark red fruits of mulberry and blackberry. The perfume is in the red berry, blackcurrant spectrum (cassis), and ensures a wine of charm at an early age, with pronounced but even and round tannins. The palate has a seamless quality, with the fruit flavours merging with those of the oak, and all underpinned by grainy tannins. Being Cabernet it will cellar beautifully, 8-10 years, but age is not essential for enjoyment.
