Undeniably aromatic, with distinctive notes of raspberry, mulberry and plum, and occasional hints of dried herbs, the variety also offers a juicy, fleshy yet medium-bodied palate which is oh-so drinkable.
We have just one block of Cabernet, which we know as ‘Schoff’s Hill’, rightly named after the first land owner, Christian Schoff. Located adjacent to our homestead and a small distance from our main vineyard block.
The Spaniards to like to age their ‘serious’ Tempranillos in both barrel and bottle for extended periods (resulting in Riserva and Gran Riserva wines), and when they get it ‘right’ the results are spectacular: rich, earthy, complex, leathery, chewy wines of interest and length. But often ‘mature’.
The combination of these two noble varieties from our Schoff’s Hill single vineyard and our North Block. Shiraz vineyard are blended together to make this exceptional wine. The best of the best, handpicked, hand selected from the vineyard to the bottle.
